Terroir
The vineyards used to make our Cabernet Sauvignon are located on the foothills of Corbières, between Narbonne and Névian. The terroir is garrigue-ridden, the climate windy, warm, and sunny, in close proximity to the Mediterranean, which allows for complete maturation of the grapes.
Winemaking
Harvesting takes place in September, and once they have been sorted, the grapes macerate in a stainless-steel tank at a controlled temperature for 7 days. Once the grapes have been pressed, fermentation is done in a stainless-steel tank to preserve the fruit’s freshness.
